Ultimate Fish Taco

Ingredients

  • 400g Spanish Mackerel (can substitute with a similar white fish)
  • 2 Whole Corn Cobs
  • Lettuce
  • 1 Red Onion
  • 1 Lebanese Cucumber
  • 1 Tomato
  • ½ Fresh Pineapple
  • 1 Lime
  • 1 Bunch Coriander
  • 6 Softshell Tacos
  • Mexican Spice Mix
  • Salt and Pepper to taste
  • Olive Oil
  • Hot Sauce, Kewpie & Fried Shallots for garnish

Method

Step 1: Prepare the accompaniments

  • Dice ½ the onion, the pineapple, and a few sprigs of coriander, then combine in a bowl and set aside for serving.
  • Dice the remaining onion, tomato, and cucumber, then combine in a bowl and set aside.
  • Peel the husks off the corn, then season with olive oil, salt, and the Mexican spice mix.
  • Place over the top of hot coals and turn until cooked and charred evenly.

Step 2: The Fish

  • Season the fish fillet with a generous amount of the Mexican spice mix, olive oil, and salt.
  • Place the fish on a grill over some evenly distributed hot coals.
  • Cook & turn evenly until the outside is crispy but the inside is only just cooked. Let rest for 10 minutes after cooking.
  • Gently break the fillet apart and toss together. Season with more olive oil to prevent the fish from drying out.

Step 3: Plate and Serve

  • Once the remaining prep is done, grill the soft tacos over the coals.
  • Serve alongside the fish, salsa, lettuce, and condiments immediately.
  • Garnish with hot sauce, mayo, and fried shallots.
